How it all began...
Island Empanada is owned and operated by Roy and Kathy Pelaez. They have two beautiful daughters who are very active in the business. Roy worked in the bar and restaurant business for more than 20 years before joining the ARAMARK corporation, where he worked for 15 years as a senior manager and was recognized for his innovative and unique managerial skills.
We have mastered the art of making empanadas
For many years, Roy has been making empanadas from his home for family and friends and dreamt of opening the only restaurant specializing in empanadas on Long Island, NY. A
self-taught cook, Roy has trained in both Puerto Rico and the Dominican Republic, where he has mastered the art of empanada making. He also crafts a secret sofrito seasoning that gives the empanadas an authentic “taste of the islands.”
Roy is a graduate of C.W. Post and Sachem High School, where he captained the varsity hockey team. Kathy Pelaez is a case manager in Suffolk County. Kathy is a graduate of Dowling College and Sachem High School. Kathy is very active in the community and has held many PTA positions within her school district.
